  • 1tablespoons butter
  • 50grams grated mature cheese, such as cheddar (any strong cheese will be good)
  • 1 pinch freshly ground black pepper

Description

This is an easy but impressive standby for a light supper or lunch dish. Serve with a green salad.

Method

Step 1 of 3

Whisk the egg whites to soft peaks. In a separate bowl, whisk the cream and Parmesan into the egg yolks and season well. Fold in the egg whites gently until they are well combined.

Step 2 of 3

Heat the butter in a 25cm non-stick frying pan. Add the egg mixture and cook over a low heat for 5 minutes, until the sides have set, without moving it. Scatter the cheese over the omelette and carefully fold it in half.

Step 3 of 3

Continue to cook for another couple of minutes, then turn it out onto a plate and rest it for a minute or two. The middle will continue to cook as it rests. Cut in half to serve.
