  • 500grams Woolworths beef mince
  • 35grams Old El Paso nachos spice mix
  • 175grams Old El Paso original tortilla chips
  • 1 cup tasty shredded cheese
  • 1 avocado, chopped
  • 420grams Woolworths corn kernels, drained, rinsed

Description

A budget-friendly Mexican fiesta that combines the flavours of seasoned beef mince, creamy avocado and crunchy corn on a bed of tortilla chips. Enjoy with friends or as a quick and easy meal.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Heat 1 tsp oil in a large frying pan over medium-high heat. Add mince and cook, stirring often, for 4 minutes or until browned. Add spice mix and ½ cup water. Bring to a simmer and cook for 3 minutes or until thickens.

Step 2 of 4

Arrange chips, mince mixture and cheese in two layers in a 20x25cm rectangular baking dish. Bake for 10 minutes or until cheese melts.

Step 3 of 4

Combine avocado, corn and remaining oil in a bowl. Season.

Step 4 of 4

Spoon avocado mixture over nachos. Serve.
