  • 1 cup SunRice medium-grain white rice
  • 1tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • 400grams Woolworths pork sizzle steak
  • 400grams Woolworths COOK rainbow vegetables stir-fry mix
  • 28grams Maggi Chinese fried rice recipe base
  • 1/2 iceberg lettuce, leaves separated

Description

Savoury rice, tender pork and crisp iceberg lettuce leaves come together in these cups of flavour. Whip up these speedy pork fried rice lettuce cups tonight.

Method

Step 1 of 4

Cook rice according to absorption method following packet instructions. Transfer to a baking tray. Spread evenly and set aside to cool slightly.

Step 2 of 4

Meanwhile, heat half of the oil in a wok over medium-high heat. Pour eggs into wok and swirl to coat the base evenly. Cook for 1 minute or until just set. Slide onto a chopping board. Roll up and thinly slice.

Step 3 of 4

Heat remaining oil in the wok over high heat. Stir-fry pork, in two batches, for 1 minute or until just cooked. Return all pork to wok with vegetables. Stir-fry for 1 minute or until vegetables are just tender.

Step 4 of 4

Combine recipe base and 1/3 cup water in a small bowl. Add to wok with rice. Stir-fry for 1 minute or until well combined and heated through. Divide pork fried rice among lettuce leaves. Top with omelette. Serve.
