  • 1tablespoons extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1/4 cup butter chicken curry paste
  • 750grams Woolworths RSPCA Approved chicken thigh fillets, trimmed, cut into coarse 4cm pieces
  • 3centimeters ginger, peeled, finely grated
  • 410grams tomato purée
  • 1/2 cup light thickened cream
  • 1 cup Woolworths long-grain white rice
  • 1/4 bunch coriander, sprigs picked

Description

Succulent chicken slow-cooked in a rich, creamy sauce infused with aromatic spices, this easy butter chicken recipe is perfect for a weeknight dinner or cosy weekend meal.

Method

Step 1 of 4

Heat oil in a medium saucepan over medium-high heat. Add onion. Cook, stirring often, for 3 minutes or until soft. Add paste and cook, stirring, for 30 seconds. Add ½ cup water. Stir to combine. Remove from heat.

Step 2 of 4

Add chicken and ginger to the bowl of a slow cooker. Pour in onion mixture and purée. Mix until well combined. Season. Cover and cook on ‘high’ for 2 hours or ‘low’ for 4 hours.

Step 3 of 4

Transfer 2/3 cup sauce to a small bowl. Add cream. Stir to combine. Pour cream mixture back into slow cooker. Mix until well combined.

Step 4 of 4

Cook rice following packet instructions. Dive rice and butter chicken among bowls. Top with coriander. Serve.
