  • 650grams Woolworths slow cooked mild Mexican pork shoulder
  • 250grams Woolworths microwave brown rice
  • 400grams Woolworths no-added-salt black beans, drained, rinsed
  • 1/4 bunch coriander
  • 1 tomato, chopped
  • 2teaspoons extra virgin olive oil
  • 150milliliter Woolworths light sour cream

Description

With Mexican pork shoulder, brown rice, black beans, tomato salsa and sour cream, these flavourful bowls offer budget-friendly comfort at its best.

Method

Step 1 of 4

Heat pork in the microwave following packet instructions.

Step 2 of 4

Heat rice in the microwave following packet instructions. Transfer to a large bowl. Stir in half of the beans.

Step 3 of 4

Meanwhile, reserve a few coriander sprigs to serve. Finely chop remaining coriander, including the stems. Place coriander in a large bowl with tomato, oil and remaining beans. Season and stir to combine.

Step 4 of 4

Divide pork and rice mixture among bowls. Top with tomato mixture, sour cream and reserved coriander. Serve.
