- 8 chicken drumsticks from the deli
- 60grams Lee Kum Kee char siu sauce
- 2tablespoons extra virgin olive oil
- 900grams Woolworths Australian steakhouse chips
- 300grams Woolworths finely shredded coleslaw
- 1 lime
- 1 spring onion, thinly sliced diagonally
Description
This Asian-inspired twist on classic comfort food makes a delectable weeknight meal and won't break the bank.
Method
Step 1 of 4
Preheat oven to 230°C/210°C fan-forced. Line two large baking trays with baking paper.
Step 2 of 4
Place chicken in a large bowl with 2 ½ tbs sauce and half of the oil. Toss to coat. Arrange on a prepared tray. Cook, turning halfway through, for 35 minutes or until cooked through. Place chips on remaining tray. Add to oven with chicken. Cook, tossing halfway through, for 20 minutes or until golden.
Step 3 of 4
Finely grate lime zest. Cut lime in half. Juice 1 half, then cut remaining half into wedges. Whisk zest, juice, remaining sauce, remaining oil and 1 tbs water in a large bowl. Season with freshly cracked black pepper. Add coleslaw and pale green part of onion. Toss to coat.
Step 4 of 4
Sprinkle chicken with remaining onion. Serve chicken with chips, slaw and lime.
