Method

Step 1 of 4

Preheat oven to 160°C. Grease and line a 6-cup capacity loaf pan with baking paper.

Step 2 of 4

Using electric beaters, beat butter, brown sugar and vanilla together until light and creamy.

Step 3 of 4

Add eggs, one at a time, and beat well between each. Sift self-raising flour, cinnamon and baking soda over butter mixture. Mash ripe bananas and stir into mixture with 1/2 cup milk until well combined.

Step 4 of 4

Spoon into prepared pan and smooth top. Bake for 1 hour or until cooked when tested with a skewer. Stand for 5 minutes before transferring to a wire rack to cool. Slice and serve.
