  • 2 tubs YoPro plain yoghurt , room temperature
  • 1/2 cup oat flour, room temperature
  • 1/2 cup almond meal, room temperature
  • 1/4 cup coconut flour, room temperature
  • 1/4 cup pure maple syrup, room temperature
  • 80grams coconut oil, room temperature
  • 175grams light cream cheese
  • 3 egg
  • 3teaspoons lemon zest
  • 1/2 cup stevia
  • 1teaspoons vanilla essence

Method

Step 1 of 10

Preheat your oven to 160°C fan forced

Step 2 of 10

Grease and line a cake or spring tin with baking paper

Step 3 of 10

Combine oat flour, coconut flour, and almond meal with maple and melted coconut oil

Step 4 of 10

Press into base of tin and bake for 10-12 minutes until lightly brown

Step 5 of 10

Remove tin and cool completely

Step 6 of 10

In a bowl, beat together cheese and yoghurt, and in stevia and 1 egg at a time until combined

Step 7 of 10

Grate in lemon zest and stir in vanilla

Step 8 of 10

Pour over base and bake for 45-50 minutes until it has a slight wobble when touched in the centre

Step 9 of 10

Cool and pop in the fridge to set the another 2-3 hours

Step 10 of 10

Cut into 12 slices
