  • 8 rashers Bertocchi Gold Streaky Bacon
  • 1 head baby cos lettuce, separated and washed
  • 300grams mixed tomatoes, sliced
  • 1 piece avocado, stoned, peeled and thinly sliced
  • 1/2 piece red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2tablespoons red wine vinegar
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 3

Heat a non-stick frypan over medium low heat and cook the bacon until browned and crispy. Remove and drain on paper towel, then cut each rasher in half.

Step 2 of 3

Arrange the cos lettuce leaves over a serving platter, tearing any large leaves into bite sized pieces. Top with sliced tomatoes, avocado, and scatter with sliced onion and the fried bacon.

Step 3 of 3

Place the oil and vinegar in a small jar and season to taste with salt and pepper, shake to combine and then pour over the salad. Enjoy the salad immediately, while warm.
