- 1 cup mint, leaves roughly chopped
- 8 chicken breast fillets
- 5milliliter virgin olive oil spray
- 1 pinch pepper (for seasoning)
- 8 slice prosciutto
- 180grams marinated fetta, drained
- 1 pinch sea salt ground (to taste)

Preheat oven to 200°C. Line a baking tray with baking paper.

Crumble feta in a bowl. Add mint and season with salt and pepper. Stir until combined. Using a small sharp knife, cut a pocket into the thick side of each chicken fillet. Fill with feta mixture. Wrap a slice of prosciutto around each chicken breast and secure with kitchen string.

Traditionally, in Greek-style cooking, this dish would be made using vine leaves instead of prosciutto.

Vine leaves are not readily available, try it with silverbeet instead! Pour boiling water over silverbeet leaves and leave for 2 minutes to soften. Refresh in cold water and trim away thick centre stem. Prepare chicken as per main recipe and wrap a leaf around each piece, securing with kitchen string. Cook as per main recipe.

Place onto prepared tray and spray with olive oil. Bake for 20-25 minutes or until chicken is golden and cooked through. Serve whole or sliced.
