  • 8 chicken pieces, such as thighs and breasts, skin on
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 2 sticks celery, finely chopped
  • 1 1/4 cup Marsala
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 50grams pine nuts, toasted
  • 50grams sultanas
  • 1 handful fresh flat-leaf parsley, finely chopped

Method

Step 1 of 3

Heat the oil in a large cast-iron pan or casserole over a medium heat. Add the chicken pieces, and cook for about 8 minutes until golden all over. Remove from the pan, and set aside.

Step 2 of 3

Reduce the heat to low. Add the onion, carrots, and celery to the pan, and sweat gently for a few minutes until soft. Pour in the Marsala, season with salt and black pepper, and simmer gently for about 30 minutes, topping up with water a little at a time if it begins to dry out - but don’t add too much because it should be fairly dry and the water will dilute the flavour.

Step 3 of 3

Stir through the pine nuts, sultanas and cooked chicken. Cook for a few minutes more. Just before serving, stir through the parsley. Serve with a dressed green salad and fresh crusty bread.
