  • 1 brown onion, thinly sliced
  • 1/3 cup parsley, roughly chopped
  • 400grams can diced tomatoes
  • 400grams can lentils, drained, rinsed
  • 1tablespoons olive oil
  • 500grams extra-lean pork sausages

Method

Step 1 of 2

Heat oil in a non-stick frying pan over a medium heat. Add onion and cook for 5 minutes or until tender. Transfer onion to a bowl, set aside. Squeeze meatball-size portions from sausages into the frying pan. Cook for 8 minutes, shaking pan often, or until meatballs are browned on all sides.

Add onion, tomatoes, lentils and water to the pan. Stir until mixture comes to the boil. Cover pan and cook for 2 minutes. Spoon into shallow bowls. Garnish with parsley. Serve with broccoli.
