  • 5 cups self raising flour
  • 300milliliter thickened cream
  • 2teaspoons baking powder
  • 1 1/2 cups castor sugar
  • 4 medium eggs
  • 2teaspoons lemon essence
  • 1teaspoons vanilla essence
  • 1teaspoons butter, melted
  • 2teaspoons flaked almonds (for topping)
  • 2teaspoons sprinkles (for topping)
  • 1 egg (for egg wash)

Description

Biscotti alla Panna (Cream Biscuits).

Method

Step 1 of 3

Beat together eggs and sugar for 5 mins until fluffy. Add melted butter, lemon and vanilla essence. Add cream and beat for further 1 min.

Step 2 of 3

Sift self raising flour and baking powder in a bowl and fold slowly bit by bit into mixture. Dough should be of a smooth consistency. Let it stand for 10 mins.

Step 3 of 3

Prepare a lined baking tray and using a dessert spoon roll into small logs and make a few lines with a fork on the top. Brush with egg wash and sprinkle either Flaked almonds or Sprinkles. Bake at 200 Celsius for 18 mins or until golden brown. Allow to cool on a wire tray. They are best enjoyed dipped in coffee. Enjoy!
