- 125grams butter, softened
- 2 eggs, whisked (prior to adding to ingredients)
- 1 1/2 cups self-raising flour, sifted
- 3/4 cup caster sugar
- 1/4 cup milk (or omit this and add two tablespoons of greek yoghurt)
- 1/4 cup orange juice (if using greek yoghurt instead of milk, make this around 1/2 cup)
- 1tablespoons orange zest, finely grated
- 2 cup icing sugar, sifted
- 3tablespoons orange juice
- 1/2tablespoons orange zest, finely grated

Description
This has a delicious orange tang, great on its own or served with thickened cream
Instruction tip
Add more orange juice if you like a real 'orange' tang. I like to use Greek yoghurt instead of the milk (and add more orange juice) as it gives it more of a citrus tang.
Method
Step 1 of 7
Pre heat oven to 180C
Step 2 of 7
Combine all cake ingredients and beat thoroughly for 3 minutes.
Step 3 of 7
Pour mixture into a greased or lined 20cm x 10cm loaf or 20cm round or ring tin.
Step 4 of 7
Bake in the centre of a 180C oven for 35-45 minutes. Test with skewer at around 35 mins to see if it's cooked.

Let it sit in the pan for 10 mins to cool off slightly then turn onto a wire rack and allow to cool.

Sift icing sugar into a bowl and slowly add the orange juice, stirring until you get the consistency you want. You might not use all the juice, just add what is needed for a not too runny icing.
Step 7 of 7
Sprinkle the orange rind on top.
