  • 3 cups almond meal
  • 2 egg whites, at room temp
  • 1/2 cup caster sugar
  • 1/4teaspoons salt
  • 2 zested lemons
  • 1/2 cup icing sugar, for dusting

Description

A recipe which originated from Silvia Colloca. I adapted it to change up the sugar content and made them my own mix. Hope you enjoy.

Method

Step 1 of 4

Preheat oven to 170 degrees. Combine almond meal, caster sugar, lemon zest and salt in a bowl.

Step 2 of 4

Add egg whites and mix until combined (this will take some time - it will look as though it is not coming together, but don't worry, it will).

Step 3 of 4

Mold into squarish shapes and squish slightly in the centre before dusting in icing sugar

Step 4 of 4

Bake for 10-15 minutes
