Syrup Ingredients
- 1/2 cup mandarin, juiced
- 1 1/4 cups caster sugar
- 3 mandarins, peeled and thickly sliced
- 250grams softened butter
- 1 1/2 cups caster sugar
- 1 mandarin, 2 tsp rind finely grated
- 4 eggs
- 1/2 cup sour cream
- 1 1/2 cup self raising flour
- 3/4 cup almond meal
- 1 mandarin, 2 tbs juiced
- 1 cup thickened cream (to serve)
Description
Moist light and full of flavor. This cake is perfect for any celebration.
Method
Step 1 of 11
Preheat oven to 180/160°C fan forced. Grease a 6.5cm deep, 20cm base round cake tin
Line base and side with baking paper.
Step 2 of 11
Using an electric mixer beat butter, sugar and mandarin rind until light and fluffy.

Add eggs one at a time beating well after each addition.

Stir in sour cream.

Sift flour over mixture and stir just to combine.
Step 6 of 11
Stir in almond meal and mandarin juice.

Spread mixture into prepared pan and bake for 1 hour to 1 hour 15 minutes.
Cake is ready when skewer inserted into the centre comes out clean.
If cake is browning to much cover with foil.

Make syrup while cake is cooking.
Place mandarin juice sugar and 1 cup of water in a saucepan over medium heat.
Cook stirring for 2 minutes until sugar has dissolved . Bring to a simmer and simmer for 10 minutes until slightly thickened. Add mandarin slices turning to coat and remove from heat.

Once cake is removed from oven use a skewer to pierce top of cake several times and dizzle half the syrup over the cake which is still in the pan. Stand for 15 minutes so syrup can be absorbed into the cake.

Transfer the cake to a serving plate with sides. Top with the mandarin slices and drizzle with the remaining syrup.Serve warm with cream.
