  • 1/2teaspoons gluten free baking powder
  • 1/2teaspoons mixed spice
  • 375grams mixed dried fruit
  • 80grams butter, diced
  • 1 1/2teaspoons cinnamon
  • 1 orange, juiced, rind grated
  • 1 1/2 cup almond meal
  • custard (or cream to serve)
  • 2 eggs
  • 1 1/2 cup brown sugar, firmly packed

Method

Step 1 of 6

Preheat oven to 180°C. Grease 8 holes of a medium muffin tray and line the bases with baking paper.

Step 2 of 6

Heat butter and 1/2 cup firmly-packed brown sugar in a saucepan over medium heat until butter has melted. Remove from heat and cool.

Step 3 of 6

Stir in finely grated rind of orange, orange juice and eggs and whisk until combined.

Step 4 of 6

Stir in mixed dried fruit, almond meal, cinnamon, mixed spice and gluten-free baking powder.

Step 5 of 6

Divide mixture between prepared muffin holes. Bake for 25 minutes or until cooked through. Stand for 10 minutes before turning out.

Serve with custard or cream, if desired.
