  • 170grams butter, cold and cubed
  • 50grams icing sugar (to dust)
  • 397grams condensed milk

Description

These dulce de leche biscuits are quick, easy to make and so delicious.

Method

Step 1 of 7

To make dulce de leche, place the unopened can of condensed milk in a large saucepan and cover with water. Bring to boil, simmer for 1 1/2 hrs, always checking that the tin is covered in water. Then let cool completely, don't open, or hot caramel will squirt out.

Step 2 of 7

Preheat oven to 150 degrees, line 2 trays with baking paper.

To make cookies, sift flour, icing sugar and salt into bowl, add butter and mix together with hand mixer or food processor, till dough forms, do not overmix.

Step 4 of 7

Turn out onto a lightly floured work surface and roll out until 5mm thick. Cut into 5 cm rounds, will make approx 34 rounds, 17 biscuits.

Place rounds onto prepared trays, 1 cm apart.

Bake for 12 - 15 minutes or until firm and golden brown. Transfer to a wire rack and let cool completely.

Sandwich cookies with Dulce de Leche and dust with icing sugar.
