- 3 mixed seed panini rolls
- 1/3 cup extra virgin olive oil
- 2 cloves garlic, halved
- 220grams Woolworths gourmet mixed olives, sliced
- 100grams Danish feta, crumbled
- 1/3 punnet sage, leaves picked
- 1 small red onion, thinly sliced into rounds
Description
Each of these toasted slices of bread are topped with a delicious olive-and-feta mixture, then rings of red onion and crispy fried sage. It's a masterpiece in every bite.
Method
Step 1 of 4
Cut each roll into 4 slices lengthways and brush with 2 tbs oil. Preheat a chargrill pan over medium-high heat. Rub bread with garlic. Chargrill slices, in batches, for 1-2 minutes each side or until golden-brown and charred. Transfer to a large plate.
Step 2 of 4
Combine olives and feta in a medium bowl.
Step 3 of 4
Heat remaining oil in a small frying pan over medium-high heat. Add sage and cook for 1-2 minutes or until slightly crispy. Remove from heat.
Step 4 of 4
Spoon olive mixture onto toast. Top with onion and sage. Drizzle with any oil remaining in the frying pan. Serve.
