- 1kilograms puff pastry sheets
- 1teaspoons vegetable oil
- 1.50kilograms full cream ricotta
- 4 eggs, whisked
- 250grams parmigiano, grated
- 1/2 bunch parsley leaves, chopped
- 1 pinch salt, to taste
- 1 pinch pepper, to taste
- 250grams baby frozen peas
Description
Try this authentic Maltese torta recipe made with puff pastry, spinach and ricotta. Easy-to-make and a family favourite, you’re bound to have this on weekly rotation.
Method
Step 1 of 6
Preheat oven to 220ºC fan forced.
Step 2 of 6
Cut pastry sheets into 16 quarters. Spray pastry cases or a muffin tin with oil and place quarters into the cases. You can also make a large torta in a large round tin.
Step 3 of 6
Mash together the ricotta, eggs, parmigiana, parsley, salt and pepper in a bowl until well combined.
Step 4 of 6
Spoon ricotta mix into pastry cases and top with a spoonful of peas. Fold the pastry corners over towards the centre of the torta.
Step 5 of 6
Bake in the oven for 15-20 minutes until golden brown on the base.
Step 6 of 6
Serve with a garden salad.
