Description
This tart is an elegant take on cheese and onion pie and makes a delicious lunch or entree.
Method
Step 1 of 3
Heat the butter in a large pan on medium heat and cook the onions for 8-10 minutes until softened. Stir in the balsamic vinegar and honey and cook for 2 minutes, stirring, until absorbed. Set aside to cool slightly.
Step 2 of 3
Pre-heat the oven to 200°C. Mix the goats cheese, creme fraiche and spinach together in a large bowl. Unroll the puff pastry and lay it on a parchment paper lined baking sheet. Score a border of 1cm with a knife.
Step 3 of 3
Spread the goats cheese and spinach mix within the border, top with red onions and bake for 20 minutes until puffed and golden.
