Sweet Potato with Shredded Turkey

- 3 medium sweet potato, peeled and cubed
- 300grams cooked turkey
- 1tablespoons canola oil
- 1teaspoons cumin
- 1teaspoons chilli flakes
- 1 medium red onion, peeled and diced
- 2 cloves garlic, peeled and diced
- 80grams cheddar cheese, grated
- 1/2teaspoons salt
- 1teaspoons pepper
Description
This sweet potato and turkey recipe has a spicy finish.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Place the cubed potatoes in a baking dish and cover with the oil, salt and pepper. Roast for 15 minutes.
Step 2 of 3
While the potatoes are roasting, shred or cut your turkey into bite size portions. Heat up a non-stick pan to a medium heat and fry the onion and garlic for 3 minutes.
Step 3 of 3
Cook the beans as per tin instructions and then add to the pan with the onion and garlic. Add the rest of the ingredients to the pan apart from the cheese. Also add the potatoes from the oven. Fry everything together for 5 minutes and serve with the cheese on top.
