- 1 onion, finely chopped
- 300grams chorizo, cut into chunky pieces
- 3tablespoons dry sherry
- 50grams walnuts

Method
Step 1 of 2
Preheat the oven to 200°C (Gas 6). Put the dried fruit in a bowl, cover with a little hot water, and leave to soak for 10 minutes. Meanwhile, heat the oil in a frying pan, add the onion, and cook over a medium heat for 5 minutes, or until soft and translucent. Add the chorizo and cook for a further 5 minutes, stirring occasionally.

Drain the fruit and add to the pan with the sherry and walnuts. Raise the heat and cook for a few minutes until the alcohol evaporates. Season with black pepper, combine well, then transfer to a small baking dish. Cover with foil and bake for 15 minutes. Serve with fresh crusty bread and salad.
