Baked Feta Parcel with Chorizo Crumbs

- 3 sheets filo pastry
- 5milliliter extra virgin cooking oil spray
- 200grams Danish feta
- 1tablespoons sesame seeds
- 1 cured chorizon, finely chopped
- 1/2 cup Woolworths honey
- 1 long red chilli, thinly sliced
- 1/4 punnet thyme, leaves picked
Description
Bake up this filo-wrapped feta and enjoy it with friends. The chorizo crumb offers a subtle spiciness that's offset with the sweetness of honey.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Stack pastry sheets on a clean work surface, spraying between sheets with oil. Fold pastry in half. Place feta on pastry stack. Fold in sides to enclose and form a parcel. Place parcel on prepared tray. Spray with oil. Bake for 20 minutes or until golden-brown.

Meanwhile, heat a small non-stick frying pan over medium-high heat. Add sesame seeds and cook for 1 minute or until golden-brown. Transfer to a bowl. Add chorizo to same frying pan and cook, stirring, for 2-3 minutes or until crispy. Transfer to a bowl.
Step 3 of 4
Add honey and chilli to same pan over medium heat. Bring to the boil. Reduce heat and simmer for 2-3 minutes. Remove from heat. Cool slightly.
Step 4 of 4
Place parcel on a plate. Drizzle with honey mixture. Sprinkle with chorizo crumbs, sesame seeds and thyme. Serve.
