- 2 1/4 cups plain flour
- 1tablespoons baking powder
- 1/3 cup caster sugar
- 100grams 100g salted butter, chilled, cut into 1cm pieces
- 1 egg
- 2 cups light thickened cream, chilled
- 4 pears, peeled, cut into 2cm pieces
- 3 cups frozen raspberries
- 1teaspoons cornflour
- 1/4teaspoons pure icing sugar, to dust
Description
A delightful fusion of sweet pears, tangy raspberries and golden dough balls. This easy-to-make pear cobbler with raspberries will tantalise your tastebuds with every bite.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Combine flour, baking powder and 1/4 cup caster sugar in a large bowl. Make a well in the centre. Add butter. Using fingertips, rub into flour mixture until well combined.
Step 2 of 3
Add egg and 3/4 cup cream into the well. Using a flat-bladed knife, mix the egg and cream together, then mix through the flour mixture until just combined. Bring the mixture together with your hands. Divide evenly into 12 portions. Roll each portion into a ball.
Step 3 of 3
Combine pear, raspberry, cornflour and remaining caster sugar in a 2L (8-cup-capacity) baking dish. Arrange balls on top. Brush balls with 1 tbs cream. Bake for 35 minutes
or until golden on top and bubbling at the sides. Dust with icing sugar. Serve with remaining cream.
