  • 85grams mango-flavoured jelly
  • 600mL thickened cream
  • 432grams crushed pineapple, drained
  • 1 lime
  • 1/2 cup Macro Organic toasted coconut flakes

Description

This beloved mousse-like dessert will transport your tastebuds to paradise with its divine pineapple-mango flavour and crunchy coconut topping.

Method

Step 1 of 4

Place jelly crystals in a large bowl. Add 1 cup boiling water. Whisk until crystals dissolve. Place in the fridge for 1 hour or until partially set.

Step 2 of 4

Use electric beaters to beat 1 cups cream until soft peaks form. Add partially set jelly and beat until firm peaks form. Beat in pineapple until just combined.

Step 3 of 4

Divide mixture among eight 2-cup-capacity glasses. Place in the fridge for 1 hour or until set.

Step 4 of 4

Use a zester to cut lime rind into thin strips. (Alternatively, peel rind using a peeler and cut into strips.) Beat remaining cream until firm peaks form. Top each glass with a dollop of cream, some rind and coconut flakes. Serve.
