  • 1/4 cup brown sugar
  • 1teaspoons mixed spice
  • 1 1/2 cups frozen blueberries
  • 1 cup Woolworths Australian medium-grain brown rice

Description

Aromatic spices dance with creamy brown rice in this decadent pudding, creating a hearty dessert that's as delicious as it is nutritious.

Method

Step 1 of 3

Place milk, 2 tbs sugar, 3/4 tsp mixed spice and 2 cups water in a heavy-based 20cm (base) saucepan. Place over medium-high heat, stirring often, for 10 minutes or until milk just comes to a simmer.

Step 2 of 3

Meanwhile, spread blueberries on a large plate. Set aside to thaw at room temperature.

Step 3 of 3

Stir rice into milk mixture. Reduce heat to low. Cook, stirring often, for 1 hour and 15 minutes or until rice is tender and creamy but not all the liquid is absorbed. Divide among serving bowls. Top with blueberries. Sprinkle with remaining sugar and mixed spice. Serve.
