- 700grams gold sweet potatoes, peeled
- 2 1/2tablespoons extra virgin olive oil
- 1teaspoons mixed spice
- 1/2 bunch kale, thickly shredded
- 2tablespoons Woolworths pepitas
- 2tablespoons apple cider vinegar
- 420grams Woolworths no-added-salt red kidney beans, drained, rinsed
- 100grams 100g Woolworths Greek-style feta, crumbled
Description
Delight a crowd with our tasty spiced sweet potato salad. A colourful side salad that's as bright as it is flavourful with roasted sweet potato, red kidney beans, creamy feta and crunchy kale.
Instruction tip
Swap tip:If you don’t have them on hand, replace kidney beans with any canned bean or lentil you already have in the pantry.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Cut potato into long thin wedges. Place potato on a large baking tray. Drizzle with 1 tbs oil. Season with pepper and add mixed spice. Toss until well coated. Roast for 30 minutes or until potato is golden and tender.
Step 2 of 3
Meanwhile, place kale in a large bowl with 2 tsp remaining oil. Toss, massaging oil into kale to coat well. Combine remaining oil with vinegar.
Step 3 of 3
Add potato, pepitas, beans, feta and half of the dressing to kale. Season with pepper and toss to combine. Arrange salad on a serving platter. Drizzle with remaining dressing. Serve.
