  • 700grams gold sweet potatoes, peeled
  • 2 1/2tablespoons extra virgin olive oil
  • 1teaspoons mixed spice
  • 1/2 bunch kale, thickly shredded
  • 2tablespoons Woolworths pepitas
  • 2tablespoons apple cider vinegar
  • 420grams Woolworths no-added-salt red kidney beans, drained, rinsed
  • 100grams 100g Woolworths Greek-style feta, crumbled

Description

Delight a crowd with our tasty spiced sweet potato salad. A colourful side salad that's as bright as it is flavourful with roasted sweet potato, red kidney beans, creamy feta and crunchy kale.

If you don’t have them on hand, replace kidney beans with any canned bean or lentil you already have in the pantry.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Cut potato into long thin wedges. Place potato on a large baking tray. Drizzle with 1 tbs oil. Season with pepper and add mixed spice. Toss until well coated. Roast for 30 minutes or until potato is golden and tender.

Step 2 of 3

Meanwhile, place kale in a large bowl with 2 tsp remaining oil. Toss, massaging oil into kale to coat well. Combine remaining oil with vinegar.

Step 3 of 3

Add potato, pepitas, beans, feta and half of the dressing to kale. Season with pepper and toss to combine. Arrange salad on a serving platter. Drizzle with remaining dressing. Serve.
