  • 2 sheets Woolworths frozen shortcrust pastry, partially thawed

Description

These delicious rustic galettes are a celebration of seasonal strawberries, showcasing their natural sweetness and complementing it with fresh thyme.

Method

Step 1 of 3

Place strawberries, half of the thyme leaves and 1 tbs sugar in a bowl. Stir to combine. Set aside.

Step 2 of 3

Preheat oven to 220°C/200°C fan-forced. Place a large baking tray in the oven. Place almond meal, 1 tbs sugar and half of the beaten egg in a small bowl. Stir until a paste forms. Using a 12cm-round plate as a guide, cut 2 rounds from each pastry sheet. Place rounds on a sheet of baking paper. Leaving a 2cm border, spread one-quarter of the almond mixture over centre of each round. Spoon strawberry mixture over, reserving syrup. Using the picture as a guide, fold and pleat pastry border around filling. Brush pastry edge with remaining egg and sprinkle with remaining sugar.

Carefully transfer galettes, on baking paper, to hot baking tray. Bake for 15-20 minutes or until pastry is golden. Stand for 5 minutes. Drizzle with reserved syrup and sprinkle with remaining thyme. Serve.
