  • 500grams gold sweet potatoes, scrubbed, skin on
  • 5mL extra virgin olive oil cooking spray
  • 16 slices pepperoni
  • 1 cup Woolworths smoky chipotle shredded cheese
  • 300mL Woolworths light sour cream
  • 1 avocado, coarsely chopped
  • 1/4 bunch coriander, chopped
  • 16 drops Tabasco chilli sauce

Description

A delicious sweet potato pizza base topped with Mexican-style pizza toppings. Spicy pepperoni, smoky cheese and creamy avocado bring the flavour up a notch.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Trim base of potatoes so they sit flat and steady for cutting. Carefully cut each potato lengthways into 4 slices. Place on a large baking tray. Spray with oil on both sides. Roast for 20 minutes. Turn over and cook for 20 minutes until golden.

Step 2 of 3

Divide pepperoni among potato slices. Top with cheese. Return to the oven for 3 minutes or until cheese has melted.

Step 3 of 3

Top potatoes with a dollop of sour cream, then avocado and coriander. Drizzle with sauce to serve.
