- 50grams butter, softened
- 50grams caster sugar
- 1 egg yolk
- 200grams brown rice flour
- 1tablespoons ground almonds
- 50grams white chocolate, grated
- 2teaspoons icing sugar (to serve)

Method
Step 1 of 3
Place the fats and sugar in a large bowl and beat together, then beat in the egg yolk followed by the remaining ingredients. Form the dough into a ball, wrap closely in clingfilm and chill for 1 hour.
Step 2 of 3
Remove the dough from the refrigerator, unwrap and place on a lightly floured surface. Knead the dough a little to soften it, then divide into 20 balls.
Step 3 of 3
Place the balls on 2 baking sheets, flatten them slightly with a fork and bake in a preheated oven, 180°C for about 20 minutes until golden. Transfer to a wire rack to cool. Dust over a little icing sugar before serving.
