  • 2 zucchini, cut into rounds
  • 1 red onion, cut in half, sliced
  • 1/4 cup extra virgin olive oil

  • 4 Woolworths lamb forequarter chops
  • 1/4 bunch basil, leaves picked
  • 1/3 cup basil pesto
  • 4 slices sourdough, toasted, to serve

Description

Woolworths lamb forequarter chops are ideal for a family-sized traybake, alongside eggplant, capsicum, zucchini and onion. Basil pesto and sourdough toast completes the meal.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a large baking tray. Arrange eggplant, capsicum, zucchini and onion on prepared tray. Drizzle 2 tbs oil over vegetables, then sprinkle with 2 tbs spice blend. Bake for 15 minutes.

Step 2 of 3

Meanwhile, place lamb on a large plate. Drizzle remaining oil over lamb, then sprinkle with remaining spice blend, turning to coat all over. Heat a large non-stick frying pan over medium-high heat. Add lamb and cook for 2 minutes each side or until browned all over.

Step 3 of 3

Place lamb on top of vegetables on tray and bake for a further 8 minutes for medium or until cooked to your liking. Sprinkle with basil. Top with pesto. Serve with toasted sourdough.
