  • 2/3 cup continental parsley leaves
  • 1/2 bunch basil, leaves picked
  • 1/4 cup red wine vinegar
  • 2tablespoons drained capers
  • 2 anchovy fillets
  • 2 cloves garlic
  • 1 lemon, cut into wedges

Description

Woolworths lamb cutlets are a crowd-favourite for a reason. When they’re served with a fragrant homemade salsa verde, you'll have family coming back for thirds.

Method

Step 1 of 4

Place lamb on a large plate. Drizzle 2 tbs oil over lamb, then sprinkle with seasoning, turning to coat all over.

Step 2 of 4

Preheat a chargrill or barbecue grill to medium-high. Add lamb and cook for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover, then rest for 5 minutes.

Step 3 of 4

Meanwhile, reserve ¼ cup parsley sprigs and ¼ cup basil leaves. Set aside. To make salsa verde, process remaining parsley and remaining basil with vinegar, capers, anchovies, garlic and remaining oil until almost smooth.

Step 4 of 4

Place lamb on a plate. Sprinkle with remaining parsley and basil. Serve with salsa verde and lemon.
