  • 400-800grams Mutti Organic Peeled Tomatoes

  • 1 dollop greek yoghurt (optional)

Simplifying an eastern European classic, this dish is perfect for great value meals, enough for leftovers, budget friendly, prep friendly, and easy for beginners. This nutritious almost-one-pan dish is perfect for a weeknight flavour hit.

This dish has been simplified to be very accessible and convenient however you can try adding different ingredients to jazz it up. Eggplant, capsicums, mushrooms, zucchinis all cook extremely well with peeled tomatoes.

Method

Step 1 of 7

Preheat the oven to 180C/350F fan forced.

Step 2 of 7

In the frying pan, brown the chicken. To expedite the browning process, make sure the chicken has been dried, and salted.

Step 3 of 7

Once the chicken has been browned, take the chicken out of the pan and add the onion, chickpeas, herbs and spices, the Mutti Organic Peeled Tomatoes, and combine. For a smoother sauce, press the tomatoes into the desired consistency.

Pour the mixture into a baking tray and nestle the chicken pieces evenly across the tray.

Place in the oven for about 35-40mins until the chicken is at least 74 degrees at its thickest part, or until the juices run dry.

Step 6 of 7

Take out of the oven and rest for 5 minutes and then garnish with fresh parsley and the juice of a freshly squeezed lemon.

Step 7 of 7

Serve with rice, potato, or sides of your choice. Greek yoghurt makes an excellent condiment.
