- 1 pinch salt
- 1 pinch freshly ground black pepper
- 4 pork chops
- 1 large dessert apple
- 4teaspoons honey
- 4 sprigs oregano
- 1/3 cup dry cider
- 1 cup mashed potatoes (to serve)
- 1 cup green vegetables (to serve)
Description
Cooking the pork chops slowly in foil tenderises the meat and helps retainmoisture.
Method
Step 1 of 3
Preheat the oven to 180°C (Gas 4). Cut 4 sheets of baking foil large enough to enclose the chops. Pour a teaspoon of oil on each one and spread over the middle. Dry the chops on kitchen paper, place in the centre of each foil sheet, and season.
Step 2 of 3
Cut the apple into quarters, take out the core, slice each piece into 4, and spread over the chops. Top each chop with a teaspoon of honey, a sprig of marjoram, and a splash of cider.
Step 3 of 3
Fold the foil over to create a little enclosed parcel. Place on a baking tray and cook in the oven for about 1 hour. Serve hot with mashed potatoes and green vegetables added to the foil parcels.
