- 500grams turkey mince
- 10milliliter olive oil
- 2 carrots, peeled, diced
- 2 sticks celery, diced
- 1 brown onion
- 1/2 cup mushrooms
- 1 bunch rosemary (to garnish)
- 1 bunch parsley (to garnish)
- 2 bay leaves
- 1L vegetable stock
- 1/4 cup dry white wine
- 280grams tomato paste
- 350grams passata
- 2 cups spaghetti
- 1/2 cup parmesan (to serve)
- 1 bunch thyme (to garnish)

Cook The onion, celery, carrot and mushroom in olive oil until they’ve softened

Add the mince and cook until browned and all the water is cooked out (when you see it creating a somewhat brown jus on the bottom of the pot but not burning this is good)

With all the brown jus on the bottom of the pot add the wine and scrap it all off the bottom. Cook the alcohol off for about 2 minutes

Add the vegetable stock, tomato paste, passata, Bouquet of Garni and bay leaves. If adding the milk add it now.
Step 5 of 7
Stir all together and let simmer on low/medium heat for about 90-120 minutes. The longer the better until it’s the thickness that you want it. Once you are happy with the thickness remove the Bouquet of Garni and the bay leaves, discard the leaves.

Serve, add parmesan to taste.
