  • 2tablespoons coriander leaves

Method

Step 1 of 3

Heat oil in a large non-stick frying pan over medium-high heat. Add rice paper sheets and cook for 1 minute, flattening with a spatula, or until crispy underneath.

Step 2 of 3

Turn sheets, top with egg and cook for a further 1-2 minutes or until egg is cooked. Transfer to a serving board.

Step 3 of 3

Top with sriracha, onion and tuna. Drizzle with mayonnaise. Sprinkle with coriander. Serve.
