- 2 pears, cored, cut into wedges
- 2 peaches, cut into wedges
- 2tablespoons maple syrup
- 1/3 cup extra virgin olive oil
- 1/3 cup balsamic vinegar
- 1 lemon, juiced
- 300grams Made With Plants Meat-free Roast Duck
- 120grams baby rocket leaves
- 1 small red onion, thinly sliced
- 28grams hazelnuts, toasted, coarsely chopped
Description
Going meat-free has never looked or tasted so good! This vibrant, crunchy meat-free roast duck and hazelnut salad ticks all the boxes.
Method
Step 1 of 4
Combine pears and peaches in a bowl. Add maple syrup and toss to coat. Whisk oil, balsamic vinegar and lemon juice in a bowl.
Step 2 of 4
Preheat a barbecue grill or chargrill pan over medium-high heat. Add pears and peaches and cook for 2 minutes each side or until browned and tender.
Step 3 of 4
Add meat-free duck to grill and cook for 2 minutes each side or until browned and hot. Transfer to a chopping board. Slice.
Step 4 of 4
Place rocket on a serving platter. Top with onion, pear, peach and duck. Drizzle with balsamic dressing. Serve sprinkled with hazelnuts.
