  • 6 small red radishes, scrubbed

  • 150grams Danish feta, crumbled
  • 5milliliter extra virgin olive oil cooking spray
  • 2tablespoons extra virgin olive oil

Description

For dinner or lunch in under 20 minutes, try this easy fattoush recipe, which uses tuna as the main protein. Top it with crispy Lebanese bread and a zesty lemon dressing for the full experience.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Place bread on prepared trays and spray with oil. Sprinkle with 2 tsp sumac and bake for 5 minutes or until golden-brown and crisp. Cool slightly. Break into shards.

Step 2 of 4

Slice radish and cucumber into thin rounds. Halve tomatoes.

Step 3 of 4

Combine oil and lemon juice in a large bowl. Season with freshly ground black pepper.

Step 4 of 4

Tear lettuce into large pieces. Add lettuce, radish, cucumber, tomato, parsley, garlic and tuna to oil mixture in bowl. Add bread. Gently toss to combine. Spoon salad into bowls. Top with feta and sprinkle with remaining sumac.
