  • 280grams frozen Ocean Chef Atlantic Salmon Parcels in Leek & Cheese Sauce
  • 60grams baby spinach leaves
  • 2 small red radishes, scrubbed, very thinly sliced
  • 1 bulb baby fennel, very thinly sliced
  • 1 small Granny Smith apple, very thinly sliced
  • 1/2 stick celery, thinly sliced
  • 1/4 cup pale inner celery leaves
  • 2tablespoons dill sprigs
  • 3teaspoons apple cider vinegar
  • 2teaspoons extra virgin olive oil

Description

Salmon parcels are a delicious way to enjoy tender salmon. Served with a light, refreshing salad, this recipe will become a weekly favourite.

Method

Step 1 of 3

Cook salmon parcels according to packet instructions.

Step 2 of 3

Meanwhile, place spinach, radish, fennel, apple, celery, celery leaves and dill in a bowl. Combine vinegar and oil in a small bowl. Add to salad and toss gently to combine.
