- 1 1/2 cups self-raising flour, plus extra for dusting

- 1/4 bunch basil, leaves picked

Description
Ready for crunchy homemade flatbreads in just 20 minutes? These ones are topped with spicy chorizo, fresh broccoli and basil, and a lather of zesty lemon ricotta.

Prepping tip:Bread can be prepared a day ahead. Store in an airtight container. Vegetables can be cut up to 2 days ahead. Store in an airtight container in the fridge.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Line two large baking trays with baking paper. Zest and juice 1 lemon. Cut remaining lemon into wedges.

Combine ricotta, lemon zest and lemon juice in a small bowl.
Step 3 of 4
To create flatbreads, combine flour and yoghurt in a large bowl. Stir to combine into a soft dough. Divide dough into 4 equal balls. Using a floured rolling pin on a lightly floured work surface, roll each ball out into a 20cm-long, 1cm-thick oval. Place flatbreads on prepared trays.

Finely chop chorizo. Spread each flatbread with ricotta, then top with broccoli, onion and chorizo. Spray with oil and bake for 15 minutes or until cooked and golden-brown. Sprinkle with basil and serve with lemon.
