- 450grams Macro perfectly firm tofu
- 1 cup Texas-style BBQ marinade
- 2tablespoons tomato paste
- 1tablespoons salt-reduced soy sauce
- 5milliliter extra virgin olive oil cooking spray
- 4 corn cobs, husks and silk removed
- 500grams microwave brown rice & riceberry, heated
- 1 head baby cos lettuce, leaves separated
- 1/4 bunch celery, sliced
- 2 carrots, shredded
- 1/2 bunch coriander, sprigs picked
Description
Satisfy your comfort food cravings with this game-changing vegetarian bowl. Crispy tofu is tossed in a smoky, tangy sauce and served over a bed of rice with your favourite salad toppings.
Method
Step 1 of 4
Preheat oven to 240°C/ 220°C fan-forced. Line 2 large baking trays with baking paper.
Step 2 of 4
Drain tofu between paper towel or a clean tea towel for 15 minutes to remove excess moisture. Crumble into large chunks and spread out evenly over 1 prepared tray.
Step 3 of 4
Mix together marinade, tomato paste and soy sauce. Pour over tofu. Using a spoon, stir to coat. Bake for 10 minutes. Remove from oven, spray again with oil and bake for a further 10 minutes or until sticky and charred. Add corn to the second tray in the last 5 minutes.
Step 4 of 4
Divide rice, lettuce, celery and carrot among serving bowls. Using a knife, cut corn kernels from cobs. Add corn and tofu to bowls. Serve topped with coriander.
