  • 1/2 bunch coriander
  • 420grams Edgell corn kernels, drained, rinsed
  • 1 1/2tablespoons extra virgin olive oil
  • 4 frozen Woolworths basa fillets
  • 6 Old El Paso flour tortillas
  • 1/4 red cabbage, shredded
  • 1 lime, cut into wedges

Description

These tasty fish tacos are a summery delight! Succulent basa fish fillets are paired with a zesty corn salsa for a budget-friendly meal that's sure to please everyone.

Method

Step 1 of 4

Chop half of the coriander. Separate the remaining coriander sprigs. Place corn and chopped coriander in a bowl. Season and mix to combine.

Step 2 of 4

Heat 2 tsp oil in a large non-stick frying pan over medium-high heat. Season fish and add 2 fillets to the pan. Cook for 2 minutes each side or until fish is cooked. Transfer to a plate. Cover to keep warm. Repeat with 2 tsp remaining oil and remaining fish.

Step 3 of 4

Wipe the frying pan clean. Heat ½ tsp remaining oil in the pan over medium-high heat. Cook 1 tortilla for 30 seconds each side or until light golden. Transfer to a serving plate. Repeat with remaining oil and tortillas.

Step 4 of 4

Divide cabbage and fish among tortillas. Top with salsa and coriander sprigs. Serve with lime wedges.
