Description

Stuffed with scrambled eggs, hickory smoked bacon, shredded mozzarella, baby spinach and sliced tomato, these tasty toasted breakfast wraps tick all the boxes.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease and line a large baking tray with baking paper. Heat a large non-stick frying pan over medium-high heat. Add bacon and cook for 2 minutes each side or until browned. Remove from heat.

Step 2 of 3

Place 1 wrap on a clean work surface. Top with cup mozzarella, leaving a 3cm border. Make a small indent at centre of cheese, then crack 1 egg into indent. Top egg with one-quarter of the bacon, a little of the spinach and one-quarter of the tomato. Carefully fold in edges to create a parcel and enclose filling. Place wrap, seam-side down, on prepared tray. Repeat with remaining wraps, mozzarella, eggs, bacon, spinach (reserving a little to serve) and tomato to make 4 parcels in total. Spray with oil.

Step 3 of 3

Bake for 15 minutes or until golden-brown. Remove from oven. Cool slightly. Cut in half. Serve with remaining spinach.
