Description
Take bacon and egg rolls to the next level with these luxurious brioche breakfast burgers. They’re easy to make and are sure to make anyone’s morning extra special.
Method
Step 1 of 3
Heat oil in a frying pan over medium-high heat. Cook bacon, in 2 batches, for 4 minutes on each side or until golden. Transfer to a paper towel-lined plate to drain. Cut each rasher crossways into thirds.
Step 2 of 3
Reduce heat to medium, then cook eggs, in 2 batches, for 3 minutes or until whites are set and yolks are still soft.
Step 3 of 3
Spread bun bases with aioli, then top each with rocket, bacon and an egg. Drizzle with a little tomato sauce and season. Sandwich with bun tops and serve with remaining tomato sauce.
