Looking for a fresh and easy breakfast idea? Liven up a classic fried egg on toast with punchy basil pesto, creamy ricotta and a sprinkling of chilli.

Method

Step 1 of 3

Heat a frying pan over medium heat. Add pesto and cook, stirring, for 1 minute or until pesto starts to bubble.

Step 2 of 3

Crack egg over pesto and cook for 2 minutes or until egg white has set. Remove pan from heat.

Step 3 of 3

Spread toast with ricotta. Top with pesto egg and sprinkle with chilli flakes, if using. Serve.
