- 2 avocados
- 1tablespoons extra virgin olive oil
- 1 lemon, 1 tbs juiced
- 2tablespoons dukkah
- 4 slice sourdough bread
- 2 small eggs
- 1 chives, snipped
Method
Step 1 of 3
Place eggs into a saucepan and cover with cold water. Bring to the boil. Remove from heat, cover, and set aside for 4 minutes. Transfer to a bowl of iced water to cool for 2 minutes. Tap eggs all over on the bench and carefully peel.

Meanwhile, toast or chargrill bread and drizzle with olive oil. Press oil side down onto dukkah to coat. Cut into fingers.
Step 3 of 3
Halve avocados and remove seeds. Place onto plates and drizzle with lemon juice. Halve eggs and sit each half into the hollow of the avocado. Top with chives. Serve with dukkah toast fingers.
