Description

Method

Step 1 of 4

Put the kale and beans in a steamer over a high heat and steam until the kale begins to wilt - about 4 minutes.

Meanwhile, toast the bread under the grill.

Heat the oil in a small frying pan over a medium heat. Crack the eggs into the pan and cook, stirring occasionally, until cooked through.

Step 4 of 4

Spread the toast with the hummus, then layer with the kale and beans. Add a squeeze of lime, followed by the scrambled egg, seasoning, and a pinch of cayenne to taste, if you like.
