  • 4 slice Turkish bread, toasted
  • 1/3 cup olive oil
  • 8 eggs
  • 2 sprig thyme
  • 1tablespoons chives, finely chopped

Method

Step 1 of 3

Heat the oil in a large frying pan over medium-high heat. Add the mushrooms and thyme and cook for 3-4 minutes or until golden. Season to taste. Keep warm.

Step 2 of 3

Bring a saucepan of water to the boil. Add vinegar and remove from heat. Break 2 eggs into a saucer. Slide into water 1 at a time. Cover and leave for 3 minutes for soft poached. Remove with slotted spoon and drain on paper towel. Repeat with remaining eggs.

Step 3 of 3

Spoon mushrooms onto toast and top with 2 eggs. Sprinkle with chives and cracked pepper. Serve.
