Mushrooms On Toast With Manchego Cheese

- 2tablespoons olive oil
- 100grams Manchego cheese, cut into shavings with a potato peeler
- 200grams closed-cup mushrooms, roughly chopped
- 1 pinch salt
- 3 cloves garlic, grated or finely chopped
- 1teaspoons paprika
- 3tablespoons dry sherry
- 1teaspoons freshly ground black pepper
- 1 handful fresh flat-leaf parsley, finely chopped
- 8 slices soda bread, toasted
Method
Step 1 of 3
Preheat the oven to 200°C. Heat the oil in a frying pan, add the mushrooms and a pinch of salt, and cook over a medium heat for 5 minutes, or until the mushrooms start to release their juices.

Add the garlic and paprika and cook for a further minute. Add the sherry and black pepper, then raise the heat and allow to boil until the liquid has reduced by three-quarters. Stir in the parsley and remove from the heat.
Step 3 of 3
Lay the toast out on a baking tray, then carefully spoon the mushroom mixture on top. Sprinkle liberally with the Manchego and cook in the oven for 2 minutes, or until the cheese has melted. Serve hot with a crisp salad.
